Delicious Lentil Salad

Here’s a yummy recipe that is high in protein and fiber.

Delicious Lentil Salad


1 cup dry brown lentils
1 cup diced carrots
1 cup diced red onion
1/4 cup olive oil
2 tbsps lemon juice
2 cloves minced garlic
1/2 tsp thyme
1/2 cup diced celery
1/4 cup chopped parsley
1 tsp sea salt
1/4 tsp ground black pepper


1. Combine lentils, carrots, onion, garlic, and thyme in a large saucepan. Add water to cover the food by about 1 inch.
2. Bring to a boil, reduce heat and simmer uncovered for 15 to 20 minutes or until lentils are tender.
2. Drain lentils and vegetables. Add olive oil, lemon juice, celery, parsley, sea salt and pepper. Toss to mix and serve at room temperature.
